Gluten Free Apple Spice Muffins

Muffins are one of my favorite breakfast foods. They go great with coffee, they are a little sweet (but not too much), and they come in so many different varieties. Give me any diet plan and I will create some sort of muffin that fits it. I need muffins in my life. Life without muffins is pointless.

These muffins are gluten free, but you'd hardly know it by their taste. My kids (who are not big fans of gluten free) gobble these up. With fall just around the corner, you'll want this recipe close by as the spicy clove, ginger, cinnamon, and nutmeg will get you feeling festive.

Gluten Free Apple Spice Muffins

2 eggs, large

1/2 C. honey, raw

1/2 C. coconut oil (substitute avocado oil or butter if you're not using coconut. My hubs is allergic to coconut, hence my substitution).

1 C. applesauce, unsweetened

1 tsp. cinnamon, ground

1/4 tsp. nutmeg, ground

1/2 tsp. ginger, ground

1/8 tsp. clove, ground

1/4 tsp. salt

1 tsp. baking soda

1 1/2 tsp. baking powder

2 1/2 C. Bob's Red Mill Gluten Free Flour*

Preheat oven to 350 degrees. Grease muffin tins.

In the bowl of a large mixer combine eggs, honey, coconut oil, and applesauce. Mix on low/medium speed until combined. Add the spices through the baking powder and mix on low. When combined, add the flour and mix one more time until combined. Divide batter into 12 muffin tins. Bake for 20-25 minutes.
