Koala Crisp Bars
My son loves all the Envirokidz cereals. I'm pretty sure it's the cute animals on the front he can't resist. Add cute, cuddly animals to anything chocolate and he's definitely sold. Instead of eating this cereal plain, I made it into some bars that you can either pack in school lunches, eat for breakfast or snack, or serve as a low-fat, gluten-free dessert in place of cookies. They taste like chocolate Rice Krispie treats. Yum.
Koala Crisp Bars:
3 C. Koala Crisp Envirokidz cereal, chocolate
1 C. rolled oats, old-fashioned gluten-free
1/2 C. coconut oil
1/4 C. honey, raw
1 C. *peanut butter, natural
1/4 C. arrowroot powder
*If you're peanut free substitute another nut butter. I recommend Almond butter.
In a large mixing bowl, combine the Koala Crisp cereal, oats, and arrowroot powder. Stir until mixed.
In a glass mixing bowl, add the peanut butter, honey, and coconut oil. Warm in the microwave until the coconut oil is melted, about 30-90 seconds. Stir. Pour the melted mixture over the dry ingredients and mix gently and thoroughly.
Line an 8 x 11 or 8 x 8 dish with parchment or wax paper. Use a large enough sheet so that it hangs out the top of the dish for easy removal later. Spray with non-stick spray.
Pour the mixture onto the parchment/wax paper and press evenly until the mixture is lining the dish and sticking together without any air pockets or holes. Refrigerate at least 1 hour before serving. When ready to serve, lift the parchment or waxed paper out of the pan onto a cutting board. Cut into square bars. Enjoy!
