I suggest firing up the grill and inviting some friends over for this recipe. You'll be sure to impress (you're welcome *wink*). Here's what you need to get started:

Peanut Sauce

Juice from 1 lime

1/4 cup peanut butter, creamy

1 Tbsp. honey

3 Tbsp. Veri Veri Teriyaki teriyaki sauce

1/8 tsp. garlic, crushed

Combine all the ingredients in a 2 cup size measuring cup or bowl. Using a fork, stir vigorously until the sauce is smooth. Serves 6

Chicken Kabobs

1 package frozen chicken tenders, thawed

2 zucchini, cut into thick pieces

1 pineapple, cut up

Veri Veri Teriyaki sauce

1 lime

If you're using wooden skewers pre-soak them in water while you cut the pineapple and zucchini. Once that is done, assemble the skewers. Here is where you can add all sorts of veggies if you don't want to stick with what I used. My favorite is red bell peppers, I just didn't happen to have any on hand. Red bell peppers or cherry tomatoes would add some nice color and be an excellent addition.

Once skewers are assembled place them on a jelly roll pan or in a baking dish. Pour some of the Veri Veri Teriyaki sauce over the top, making sure all the skewers are doused, and marinate for 20 minutes.

Heat the grill to about 350-400 degrees and grill the skewers for 3 minutes a side.

After removing the skewers from the grill, place them on a platter and squeeze the juice of 1 lime over the top. Add more lime if you want. I can never have enough lime in my life. I just love it.

Gather up all your friends and dig in!
