Scrumptious Pumpkin Pancakes

By now fall is well underway. I have shed a tear that summer is over, unpacked my sweaters from storage, made the first batch of apple cider for the season, scoured the shelves of Trader Joe's for all the best fall has to offer, and tried some new festive diffuser blends. I really need to go back to Trader Jose's and buy everything again. The harvest pasta sauce was AMAZING. Speaking of amazing, these pumpkin pancakes are pretty great, in my opinion. Give them a whirl and see what you think. As usual, I used gluten free flour, but you can substitute all-purpose, whole wheat, spelt, or whatever tickles your fancy.
